As for dremora and snow elves being an unlocked race, snow elves personally i think could be cool however, correct me if i'm wrong here but isn't falmer snow elves that were imprisoned by dwarves. Me personally I'd also say adding collecting all of the dragon priests' masks as well to that list. If you were to ask me "beating the game" would be having beat the main questline, dark brotherhood questline, thieves guild questline, college of winterhold questline, and the DLCs questlines.
